What should you order at Da Pasquale Beverly Hills? Two dishes that have stood the test of time

Da Pasquale Beverly Hills is an authentic Italian trattoria located in one of LA’s most glamorous areas. Inside, ceramic plates with olive trees and Mediterranean scenery decorate the walls. Outside, the Ferraris lined up at a car gallery remind you that this is Beverly Hills, after all.

Pasquale Morra and his wife Anna have run the restaurant since 1983. Over this time, Da Pasquale has grown into a true neighborhood institution. For many born and raised Italians, this is a home away from home. This may not be the new, hip restaurant that food bloggers are raving about. And yet, Friday nights are hectic here too.

So what should you order at Da Pasquale Beverly Hills? These are two dishes that have stood the test of time.

1. Linguine alle vongole, aka linguine with clams

“In Naples, where I am from, everybody eats linguine with clams,” says chef Pasquale. “It’s a simple dish. Just olive oil, garlic, clams, parsley, a touch of hot pepper, and a little bit of white wine.”

“This is truly a family recipe. For every Neapolitan, not just me.” The most important thing is to cook the pasta al dente. But rest assured, as any self-respecting Italian he’s very careful about that.

2. Gnocchi alla sorrentina

The recipe originated in the Sorrentine peninsula, a stretch of coastline that separates the Gulf of Naples from the world-renowned Amalfi Coast.

“Again, nothing too fancy here.” continues Pasquale.”The potato dumplings are tossed with pureed tomato sauce, basil, olive oil, Parmigiano cheese, and fior di latte.” Fior di latte is cow’s milk mozzarella, shipped all the way from Agerola, south of Naples—home to some of Italy’s best dairies.”

The imported mozzarella isn’t the only connection to Pasquale’s homeland. “Whenever I make this dish, it reminds me of my mother. You know, from when I used to live in Naples, before I came to the US searching for better opportunities. Back home, it was a special dish that she would prepare on Sundays.”
